Honey Glazed Chicken Stir Fry Recipe
Honey-Glazed Chicken Stir-Fry
Ingredients
- 12 ounces skinless, boneless chicken breast halves or skinless, boneless chicken thighs
- 2 tablespoons honey
- 2 tablespoons vinegar
- 2 tablespoons frozen orange juice concentrate
- 1 tbsp water
- 4 tablespoon soy sauce
- 1 teaspoon cornstarch
- 2 tablespoons cooking oil
- 4 cups frozen stir fry vegetables- thawed and drained
- hot cooked brown rice
1. Rinse chicken; pat dry. Cut chicken into thin strips; set aside. For sauce, in a small bowl stir together honey, vinegar, orange juice, soy sauce, and cornstarch; set aside.
2. Pour cooking oil into a wok or a large skillet. (Add more oil as necessary during cooking.) Preheat over medium-high heat. Stir-fry frozen vegetables for 3 minutes or till vegetables are crisp-tender. Remove vegetables from wok. Add chicken to hot wok. Stir-fry for 3 to 4 minutes or till chicken is no longer pink. Push chicken from the center of the wok. Stir sauce; add to center of the wok. Cook and stir till thickened and bubbly.
3. Return cooked vegetables to wok. Stir all ingredients together to coat. Cook and stir about 1 minute more or till heated through. If desire, serve immediately over rice or couscous.

Clearance obsession
I have to admit I have a clearance obsession. Nothing crappy though. I only like high priced items that are on good clearance. I bought my Graco Snugride car seat and stroller frame last year for $36 from Target!! Huge bargain. The other day I went to Babiesrus to trade in my 2 year old's car seat for a smaller one to fit into our new Jeep Cherokee, they were having a deal where you trade in your old car seat for a new one and get 25% off! Well I saw another couple looking at the old car seat I had that I was going to trade in. Long story short, I ended up selling my 2 year old's car seat to that couple for $40 and trading in my 4 year old's old car seat instead. So, I got an awesome Eddie Bauer high back deluxe car seat for $35, normal price $100. Woo hoo! Today I got a new pots and pans set, Paula Dean 10 piece from Walmart 1/2 off for $60! Love getting good deals! The only downer is that they're not dishwasher safe, but if you want your pots and pans to stay beautiful for a long time you have to hand wash them anyways. Had to share!
Diet week 2 update and menu plan
I lost 4 lbs this last week! Yeah! I didn't stick to a very strict diet except for the dinner menu plan. It was all extremely good! My kids even ate every meal without too much complaining. I found it cheaper to buy healthy meals than to buy the typical unhealthy meals. Here is my menu plan for this next week. If anyone is interested in any recipes, let me know. I will post them on here.
Saturday- Garlic Lime Chicken with Pepper Parmesan Green Beans
Sunday- Gyros, made with sliced steak, fat free cucumber sauce, whole wheat rice and whole wheat pitas
Monday- Chicken eggplant Casserole
Tuesday- Whole Wheat Spaghetti with zucchini and ground beef
Wednesday- Chicken and Shrimp Satay with Savory Peanut Dipping Sauce
Thursday- Pork Tenderloin with Asparagus
Friday- Chicken & Spinach Pasta Bake

Here is my favorite recipe from last week. I added chicken and a few more veggies. Here is the updated recipe. Let me know if you try it!

1 medium chicken breast- cooked and cubed
1 tbsp olive oil
1 small carrot or a hand full of baby carrots- diced
1 small onion- chopped
1 small zucchini- quartered and diced
2 cans chicken broth
1 cup of water
3/4 tsp salt
1/4 tsp pepper
1 cup whole wheat spiral pasta
2 cups fresh spinach- thinly sliced
Add olive oil to pan on medium heat. Add carrots and saute for a few minutes, add onions. Saute until tender. Add zucchini, chicken broth, water, salt, and pepper. Bring to boil. Add pasta and boil 15 minutes. Add chicken and boil until pasta is tender appox 5 minutes. Add spinach and heat through. Enjoy!

Diet Time!!
Since my only brother's wedding is in 11 weeks, I figured I better start my diet. Nothing fancy, just more veggies and fruits. Less butter, dairy, and no sweets at all. Also, only brown flour. That means brown rice, brown pasta, bread, etc. I will be using the blog as a way to keep me on track. I will try every Friday to update you on my progress. And tell you the week ahead's dinner meal plan, everything is homemade no pre-made sides or meals with all fresh ingredients. I am sticking to the recommended serving sizes, which is the hard part!

Sunday- Eggplants stuffed with ground beef mixture
Monday- Apricot Pork Medallions and grilled corn
